Italian cooking in London has come up in the world since the days of the formula trattoria, and these days it's quite as likely to be found within the confines of a luxurious hotel, this one on the south side of Grosvenor Square, with the United States embassy as a near neighbour. The dining room here is a smartly linened beige affair, the central feature of which is a granite-topped counter where dishes can be seen receiving their finishing touches before they wing their way to your table. A youthful Italian chef, Arturo Granato, oversees a menu that brings contemporary flourishes to the best of ancestral regional tradition, producing a first course of seared Orkney scallops with squid in fennel and coral dressing, or adding textured beetroot and hazelnuts to creamy burrata. Opulent primi take in osso buco ravioli scented with saffron, ginger, garlic and truffle, or a risotto encompassing quail, kale and foie gras, before main courses bring on home-smoked pigeon and its confit leg in a chocolate-tinged jus, accompanied by caramelised figs, Swiss chard and celeriac. Granato's take on tiramisu nearly comes off, its coffee wafer enhancing a chocolate-crumbed version of the boozy classic, or there may be rum baba with matching granita and pear compôte.
