A beautifully preserved 17th-century inn, the Chequers stands cheek-by-jowl with Belvoir Castle in a pastoral spot where Lincs meets Leics and Notts. Interiors match old and new, with brasserie-style tables and banquettes against imposing stone walls in the dining room, while the pub retains its rustic ambience with a big old fireplace and low ceilings to contain the happy babble. A winter menu of impeccably forward-thinking British food built from local supplies might start with pan-seared scallops, cauliflower purée and haggis fritters, then braised oxtail with a horseradish and tarragon crust, served with boulangère potatoes and roasted chantenay carrots. Conclude with Black Forest tipsy trifle and perhaps a glass of Muscat de Beaumes de Venise from France.
