Stapleford's lineage can be traced back to medieval times, the estate being owned by successive generations of the Earls of Harborough for nearly 500 years. Impeccable staff keep the elevated tone buoyant, and the cooking aims high too. Consider smoked mackerel pâté with celeriac remoulade and sourdough toast, or rabbit rillettes with soused carrots and sultanas to start, and then perhaps breast of corn-fed chicken with Toulouse sausage and cassoulet, the plate adorned with a swipe of vivid carrot purée. Finish with crisp-based almond and amaretti tart, served with Amaretto-laced coffee ice cream, or with fine British cheeses. Home-made breads arrive in four delicious flavoured versions.
