Virtually under the sails of an 18th-century windmill, Twelve has an ultra-modern, stripped-down sort of look, with exposed air ducts and beams, brick walls, slate flooring, sleek designer furniture and pop art on the walls. Chef-proprietor Paul Moss cooks in a bold, creative style that’s as contemporary as the surroundings, kicking off with the likes of woodland mushrooms matched with 63-degree duck yolk and onion broth. Next up, perhaps Highland red deer with roasted salsify, liquorice and kale, or Bowland beef fillet with wild mushroom and oxtail ravioli. To finish, a fun banana butty arrives with jam ice cream and peanut brittle.
