A 17th-century coaching inn in the Lancashire fell country near Preston, the Cartford furnishes both winter fires and open-air terrace dining, depending on the time of year. With its soothing riverside views over the Wyre, the dining room makes a fine spot for traditional and modern pub cooking. While the former takes in fish pie, and a suet pudding made of oxtail, beef skirt and real ale, the more voguish tendency is centred on black pudding doughnut with celeriac and apple remoulade and tarragon mustard meringue, followed by roast cod on Puy lentils with nduja and wild mushrooms, concluding with chocolate délice and coffee ice cream.
