On a corner of Rochester's high street, the castle and cathedral visible through side windows, Topes occupies a building spanning the 15th to 17th centuries, replete with wonky, sagging timbers, linen fold panels and carved black beams, the patina of age relieved by uncluttered modern decor and a relaxing mood. Excellent Kentish produce underpins a starter of slow-cooked, stuffed lamb breast with harissa and herb couscous, garlic, spinach, and tahini yoghurt, before main course brings on roasted guinea fowl with fennel, salsify crisps, roasted almonds and broccoli purée. At the end, luscious duck egg custard tart dusted with tonka bean and nutmeg is matched with raisin purée and maple syrup ice cream.
