The Sportsman has a distinctly rustic, unpretentious look, with scuffed floorboards and plain walls hung with pictures above half-panelling. Everything is made in-house, including the butter. Start with an appetiser of super-fresh oyster topped with warm chorizo before a first course of to-die-for soda bread smeared with soft cheese topped with home-smoked mackerel with apple jelly and a grating of horseradish, or pork terrine. Stunningly fresh braised brill fillet on tender leeks is topped with mussels and bacon and accompanied by creamy mash, and roast saddle of lamb arrives with seasonal vegetables. End with apple soufflé - well risen, light and airy - with salted caramel ice cream.
