Chef-patron David Pitchford's Georgian manor house has long been a Kentish destination for those in the know. Set in lush grounds that provide much fresh produce for the kitchen, it feels like a country retreat, and is run with the friendly, grown-up affability we hope to find in such places. Read's was doing modern British before many others had cottoned on to it, the dishes carefully composed and based on sound culinary tradition. Citrus-marinated salmon is all tanged up with pickled cucumber and tangerine purée, followed by lamb loin and braised breast with cabbage and raisins, and then deep-filled lemon tart garnished with frosted blueberries.
