In the heart of Canterbury, just around the corner from the cathedral, Deeson’s British Restaurant nails its colours to the mast in terms of provenance. The focus here is on sustainability, seasonality and locally sourced high quality produce, much of it from their own five-acre smallholding on the outskirts of the city. The informal restaurant has an almost gastro pub feel, as does the simple modern cooking. Pig's cheek, celeriac fondant and crispy pig’s ear might be followed by salt marsh lamb, crisp lamb shoulder, garlic mash, charred baby gem and thyme jus. White chocolate rice pudding with spiced berry compote and cinnamon doughnut is one way to finish.
