Modern brasserie cooking of informality and wit is the theme in this handsome Georgian manor house - how about a 'Battenberg' of salmon and cod with caviar and cucumber dressing? - and dishes reflect attention to detail. The visual dazzle of poached mackerel in its setting of rhubarb jelly, radish and red-vein sorrel makes a bold opening statement, and there is much to enjoy in a main course pig medley encompassing earthy ham hock, well-trimmed belly and a croquette of the cheek, alongside puréed onion and rib-sticking mash in red wine. A red wine reduction also turns up with the must-have baked Alaska, offsetting the sweetness of its meringue shell.
