Oak panels and a grand fireplace certainly make for an impressive dining room, but one would expect nothing less in this swanky 19th-century French chateau-style hotel surveying Snowdonia's peaks across the Menai Strait. The kitchen doesn't pull any left-field tricks, sticking to hearty country-house dishes. Thus a spring dinner gets going with Anglesey asparagus matched with smoked cheddar beignets and cheddar sauce, as a prelude to roast rump and pressed shoulder of lamb with raisin and caper purée and braised local vegetables. For dessert, rhubarb arrives in a shot glass with ginger beer, as well as poached and puréed, alongside pecan buttermilk pudding and buttermilk ice cream.
