Daily-changing home-grown menu in a coastal hotel

This attractive red sandstone house on a coastal inlet features a wood-floored dining room with walls in burgundy and grey. A daily-changing four-course dinner menu, including Scottish cheeses, is the offering, and there is real personality to the dishes. First up might be an odd but successful construction of smoked haddock and leek lasagne topped with a gratinated cheddar soufflé, to be followed by a much simpler, intensely flavoured rolled pork loin stuffed with spinach, accompanied by garlicky dauphinoise and a mound of braised red cabbage and apple. The dessert could then be rhubarb frangipane tart with poached home-grown rhubarb and a brandy snap basket of ginger ice cream.
