With the hallowed Roux name above the door (Monsieur Albert in this case), the auld alliance is still alive and well at this contemporary, riverside restaurant. A vein of French classicism runs through the cooking, while the impeccable Scottish credentials of the produce is trumpeted in a starter of seared, hand-dived Orkney scallops with Isle of Mull crab cannelloni, puffed tapioca and sorrel sauce. Main course matches baked cod fillet with crispy chicken wing, helped along by white bean purée, cep duxelle, golden raisins and capers, and, bringing up the rear, rhubarb and custard tart comes with praline brittle, lime sorbet and various textures of rhubarb.
