This creeper-covered Georgian house in lovely grounds is not actually on Loch Ness, and is three miles outside Inverness. The classy interiors are all stripes and tartan, with three dining rooms, each with only a few tables, decorated in restrained greys and browns. The short menu suggests smoked eel risotto with bacon crumb, warm apple jelly and basil oil, followed by Ibérico black presa pork, pork belly, black pudding, braised Puy lentils, fried quail's egg, crispy pancetta and maple jus. The inventiveness continues in desserts such as basil pannacotta on gingerbread crumble with spiced toffee apple chunks and a ginger beer sorbet.
