A 15th-century castle makes romantic setting for a hotel, and here a sympathetic updating and modernisation has managed to preserve original features. The kitchen works a modern vein without losing sight of regional traditions. Beautifully pan-fried pigeon breast is served in a stew of pancetta and Puy lentils to make a memorable starter. Scotland's lochs and coastline are the source of seafood - perhaps a cold mixed platter, or salmon fillet with braised fennel and lemony herb butter - while carnivores could try a well-composed dish of chargrilled pork chop on apple purée with a black pudding and potato cake, plus honey-roast carrots and parsnips. Finish with classic tarte Tatin.
