A red-brick inn with three guest rooms in a north Hertfordshire village, the Three Tuns has a refreshing informality, with bare tables on bare floors against blue and white walls, plus a garden terrace. Modern British pub food interspersed with old favourites is the order of the day. A trio of beetroot and goats' cheese croquettes arrives with pear and pomegranate salsa, balsamic gel and beetroot crisps, a visually stunning prelude to scarcely less dramatic sea bass with purple potatoes, vanilla-poached crayfish, smoked parsnip purée and passionfruit. To finish, there could be properly tangy lemon tart with raspberry sorbet, sprinkled with popping candy.
