The hotel’s relaxed brasserie – an uncluttered, modern space with unclothed tables, booth seating and an open kitchen – provides the setting for some well-executed contemporary cooking. The menu aims to please with a mix of casual old favourites and more elaborately worked dishes. Typical of the kitchen’s output are duck liver parfait served with peanut brittle, caramelised apple and Calvados purée, spiced poached apples and brioche, then Gloucester Old Spots pork tenderloin and belly with salt-baked celeriac, courgettes and cider jus. To finish, British cheeses feature alongside the likes of chocolate and stem ginger torte with spiced chocolate soil, limoncello ice cream and burnt lime purée.
