Ecumenical partnerships of eastern and western hemisphere culinary traditions have been one of the hallmarks of modern dining, and Chez Mumtaj brings together pan-Asian cooking styles with influences from the French gastronomic tradition in effective synthesis. In a gently lit wood-panelled ambience, the huge menus afford plenty of choice, with presentations from the contemporary canon (plenty of slates in evidence). Salmon tikka marinated in smoked paprika, dill, mustard, honey and fennel are chargrilled and partnered with coconutty beetroot, prior to Chinese-glazed Barbary duck with stir-fried vegetable julienne and a marmalade of apple, plum and rhubarb. Finish with a luminously yellow pear poached in saffron.
