If you hanker for a simpler, slower pace of life, how about the pocket-sized, car- and pollution-free island of Herm? The island's only hotel is a real time-warp experience, dispensing with TVs, phones and clocks. Every table has a sea view in the Conservatory Restaurant, where pin-sharp technique and peerless raw materials combine to impressive effect in the contemporary European menu. Start with braised lamb with garden pea salsa, cucumber and caraway seed, before curried cod teamed with saffron and lemon fondant, cauliflower textures and spiced mussel cream. To finish, there's dark chocolate tart with pink peppercorn ice cream and kaffir lime jelly.
