The gleaming white Georgian hotel with hanging baskets and coach entrance is where the future prime minister Lord Palmerston first cut his teeth in political debate. It now houses a very sleek contemporary Brasserie, with laminate floor and full-drop windows all around, where locally sourced modern British cooking is the main draw. Expect seared scallops teamed with a ball of crisped oxtail, puréed celeriac and apple sticks to start, perhaps followed by breast and stuffed wing of corn-fed chicken with caramelised onion, confit garlic and spinach, and then a triumphantly intense dessert of cherry and buttermilk pannacotta with cherry sorbet and pistachio biscotti.
