In an inconspicuous white-fronted former pub on the edge of town, The Black Rat sets its sights firmly on culinary modernism. It's now most definitely a restaurant. At the moment, the kitchen's ambitious cooking is rather hit-and-miss, with oddball combinations of ingredients and techniques. When they hit, there's much to admire, as in a starter of treacle-cured salmon, buttermilk, bergamot, cucumber and seafood cracker. Follow that with herb-crusted hogget, Jerusalem artichoke, faggot and red cabbage, or pollock loin with vanilla cauliflower, pickled beetroot, soubise, chickpea and lovage. Caramelised banana cake with peanut butter, popcorn and condensed milk or Madeleines with butterscotch sauce make a suitably impressive finale.
