A white-fronted former pub on the edge of town, The Black Rat sets its sights firmly on culinary modernism. It's now most definitely a restaurant. At the moment, the kitchen's ambitious cooking is rather hit-and-miss, with oddball combinations of ingredients and techniques. When they hit, there's much to admire, as in a vibrantly colourful fish stew of bream, ling and gurnard with aïoli and saffron noodles, or grilled monkfish tail with cauliflower purée and grape couscous in verjus. Meat could be fine Elwy lamb with goats' curd and hay-baked turnips, and white chocolate cheesecake is an impressive finale, let down slightly by the accompanying chicory mousse and beetroot granola.
