A pastoral retreat in the manner of an African safari lodge, Marwell is set in wooded grounds next door to a wildlife park, so the odd screech of a monkey is to be expected. Full-drop windows look out over the countryside, and the kitchen applies modern styling to mostly traditional dishes. Scallops with cauliflower purée come with balled apple and ink-dyed tempura for a well-balanced opening foray. All is present and correct in a main of minted lamb rump with a potato cake and celeriac purée. A chocolate fondant made with 70% gear is a stimulating finish, its fabulous riches offset with humble honeycomb and a faintly citric yogurt sorbet.
