Jake Saul Watkins has been cooking in Petersfield for nearly 20 years, more than half of that time at this beautiful 17th-century former coaching inn. Pale, neutral colours and a framework of ancient beams set the scene, and the smartly-dressed tables leave plenty of space between you and the neighbours. JSW himself is a passionate advocate for allowing brilliant ingredients to speak for themselves in carefully considered and precisely constructed dishes; everything’s made in-house, from breads and ice cream to canapés and chocolates. There’s a choice of tasting menus, a veggie option, or you can stick with the carte. A starter of partridge and girolle ravioli with cobnuts and truffle packs a serious punch, or you could keep it light via scallops, nasturtium, grelot onion and brown butter vinaigrette. Main courses brings a two-way serving of lamb – pink loin and crisp belly - accompanied by a shank croquettes, pea purée and lamby hollandaise, or if you fancy fish, perhaps brill with sea herbs, tomato and lobster velouté. To finish, intensely caramelised and buttery apple feuilletine is balanced by savoury malt cream.
