On the edge of the South Downs National Park, the restaurant at this large purpose-built hotel goes to great lengths to source local produce. The high culinary standards elevate the cooking well above that normally seen in hotel chains and the modern cooking appeals to both leisure and corporate guests. A starter of pressed New Forest game terrine served with blood orange jam and toasted thyme brioche might lead on to a main of roasted guinea fowl supreme with red-legged partridge mousse, braised red cabbage, fondant potato and Puy lentils. Conclude with honeycomb parfait with lemon curd ice cream.
