The Manchester outpost of the glitzy hotel group is a former cotton warehouse built in 1898, evident in the original walnut staircase, tiling and wrought ironwork. Its restaurant is a two-tier room with a glossy contemporary look, and the cooking is excitingly innovative, while resting squarely on the classical repertoire. Openers take in wood pigeon and rhubarb with charred spring onion, garlic and shallots, and ambitions are amply met in main courses such as salmon and samphire, dressed in beurre noisette with a vivid carrot jus. Puddings alone are worth a visit here, among them an airy winter berry soufflé with cinnamon ice cream.
