The Dysart occupies a 1904 Arts and Crafts building with original leaded windows and wooden window frames facing south over Richmond Park. Sunshine streams in on bright days, and a low-key jazz soundtrack floats around the elegant room. To start, how about roast quail, with dehydrated Petersham nettles, fermented chilli and fresh peas? Mains made with top-class ingredients might offer a three-way serving of Middlewhite pork (loin, belly and nut-crusted gammon) partnered with velvety Cévennes onion purée, radicchio, and black truffle mustard, or perhaps wild sea bass with lemon celeriac, and a spiced kaffir lime and green chilli sauce. It ends strongly with a burnt honey custard with Chablis apple.
