So prolific is wild garlic around these parts that the Beardshalls named their stylish restaurant with rooms after it. Cotswold tapas are one of the dining options, but it's on the main menus that the kitchen really shows its paces. Start with creamed goats' cheese and celeriac cannelloni in warm walnut dressing, or a grilled mackerel with smoked potato salad and shellfish sauce. Move on to shoulder of lamb with salt-baked parsnips, burnt onion and gremolata, or roasted brill with artichokes, wild mushrooms and spinach in red wine reduction. Local Woefuldane cheeses are enthusiastically supported if you don't fancy deep-fried rice pudding with poached Asian fruits in coconut sauce.
