Three Choirs estate also incorporates this hotel, where there are regular barbecues on the Vine Room terrace, and the up-to-the-minute cooking draws inspiration from other European wine-producing countries. Roast courgette and lemon risotto might precede a laden sharing platter of seafood, or something like black-eyed bean cassoulet with cumin mushrooms and pilaf. Top-gear meats are carefully sourced, as for cannon of lamb in salsa verde with roast garlic and pomme purée, while 21-day aged local beef fillet comes with all the expected trimmings, down to a peppercorned whisky sauce. Finish with white chocolate crème brûlée and raspberry shortbread, or the evergreen sticky toffee pudding and custard.
