Nico Simeone's altruism in employing youngsters who didn't get the best start in life is thoroughly commendable. Together, they produce contemporary cooking for a city-smart audience, the kind that appreciates ingenious duck leg croustillants with textures of parsnip including an Indian-spiced purée, scattered with pomegranate seeds, with perhaps a main pairing of mackerel and squid on a stew of white beans, chorizo and butternut, the dish dressed in freshly squeezed lemon. To finish, cheesecake is ritually taken apart for quenelles of lime cream cheese with a separate thyme-scented crumble, poached pear and lime gel.
