This 16th-century merchant's house by the gates of the castle makes a strikingly atmospheric, even Gothic-looking restaurant. The cooking follows a contemporary route built on Scottish traditions, with the kitchen using quality native produce. Start with partridge with grilled potato terrine and burned onion mayonnaise and follow that with beef Rossini with Madeira jus, pommes Anna and spinach. Seafood gets a strong showing, from seared scallops with Ibérico ham and garlic butter to monkfish poached in olive oil with grilled kohlrabi, cumin-spiced lentils and curry velouté. Puddings are worth a punt: perhaps pineapple tarte Tatin with rum-flavoured caramel and coconut ice cream.
