One of the city's most visually impressive dining rooms, Rhubarb at Prestonfield House is a real stunner. Classical preparations mix with contemporary ideas in a menu with broad appeal. New-season's asparagus star in a first course with morels and squat lobsters from Mull, while another combines Gressingham duck meat and foie gras in a terrine with lime brioche and macerated blueberries. Among main courses, Peterhead cod is served en papillote with cider and tamarind paste and curried celery (plus some crabmeat), and guinea fowl with its leg meat in an accompanying pastilla. There are classic Scottish steaks, too. For dessert, go for tarte Tatin for two.
