This Edinburgh hotel was the first opening for the Malmaison chain, housed in a renovated seamen's mission on the Forth waterfront in the old part of Leith, and is nowadays the grande dame of the boutique chain. A brasserie-style operation with brown leather seating, unclothed tables and candles, the restaurant overlooks the docks and there's a terrace for alfresco dining when the sun shines. The globally influenced menu might start with Goan mussels, coriander and coconut cream before a Mediterranean main of cod with shellfish vinaigrette and samphire. Look to Italy for a dessert of tiramisù with pistachio and orange biscotti.
