A converted 19th-century farmhouse surrounded by countryside just outside Hastings, Paul and Rebecca Webbe's restaurant is part of a local mini-empire. Original features like flagged floors and low beams impart a smart country feel to the ground-floor restaurant, helped along by friendly service. Sharp, contemporary cooking is the name of the game, delivered via set lunch, à la carte and tasting menus. Expect starters like chicken liver parfait with cobnut toast and balsamic pear purée, then perhaps roast rack and slow-cooked breast of lamb with apricot stuffing, dauphinoise potato and Kalamata olive purée a hit among main courses.
