Powder Mills was once the site of a major gunpowder-making operation that helped defeat Napoleon. The pretty Georgian house stands in 150 acres of lush parkland and woods with a seven-acre fishing lake. It's the kind of place where the owner's Springer Spaniels sometimes welcome arrivals and dining takes place in the Orangery Restaurant, with a bright decor of wicker chairs, linen-clad tables and marble floors. The kitchen turns out creative contemporary dishes, including artichoke soup with a truffle beignet. Main course might partner halibut fillet with spiced mussel and clam broth and apple salad. Finish with rhubarb soufflé with quince and hibiscus sorbet.
