The Gingerman is committed to dynamic modern British cooking with an inventive slant, notably incorporating touches of the Maghreb tradition. Maple-glazed pigeon breast with pine nuts and dates vies for first-course attention with salmon 'pastrami' served with caramelised parsnip and labneh, as well as an egg yolk. Mains push the envelope further for vegetarian duck egg curry with a dosa, lemon pickle and green chutney, or there may be an anatomist's approach to beef - tongue and cheek as well as fillet - garnished with charred onion and parsley root in hearty braising juices. A soufflé for two is a pleasure, perhaps rhubarb with rhubarb and custard ice cream.
