A white mansion in immaculate gardens, Buxted Park was built in early Georgian times and nowadays offers the full country-house package. The restaurant features a mixture of table and booth seating, with curved lilac-upholstered banquettes against a white background. The kitchen produces an entertaining and carefully composed version of the modern European style. Foie gras three ways (brûlée, terrine and seared), with apple sorbet and port-infused cherries, makes a stunning starter, opening the way for perhaps another trio: of pork (crispy belly, roast loin and black pudding) with cider apple jus, pears in mustard and pressed greens. Conclude with lemon tart with strawberry ice cream.
