In Brighton's famous Lanes, this bijou restaurant is big on small plates, the idea being tapas-style sharing. The menu's economically worded fish, veg and meat options – four of each – reveal nothing of how beautifully the open-kitchen team prepares them, thus ‘cod, leek, mussels’ arrives as far more than the sum of its parts, the cod oven-roasted to perfection, plump mussels in silky tarragon butter, the leek grilled. Another succinct listing delivers seared lamb leg with nutty gomasio and crisp Jerusalem artichokes served both crisp and puréed. Desserts keep the creativity on tap via a provocative combo of chocolate tofu mousse, caramelised white chocolate ice cream and miso-glazed nuts and seeds.
