For a small country hotel, Knockinaam is something of a knockout. About three miles out of Portpatrick, it stands in 30 of its own acres, with access to a private shingle beach. A handsome greystone building, it's decorated in elegant but homely style, with panoramic views of the brooding briny from the dining room windows. Tony Pierce's career began with waitering gigs in Manchester while he trained, and after compiling a star-studded CV, he has brought distinction to the kitchens here. The evening agenda is a four-course table d'hote, beginning on a winter's night with grilled turbot in a pink grapefruit emulsion sauce with pak choi, before a cappuccino soup of turnip and thyme intervenes. Main course is roast loin of red deer with puréed celeriac, winter greens and a potato gaufrette in a reduction of sloe gin, before the final course requires a choice between British and French cheeses with walnut bread, or a vibrantly rich prune and Armagnac soufflé with vanilla ice cream. Sunday lunches bring on the likes of Galloway pork loin with black pudding bonbon in red wine.
