Old-school opulence, playing golf from dawn til dusk and upmarket pampering sessions are the watchwords in this Georgian country manor in 150 acres of parkland on the Solway coast, where a pianist tinkling away in the background adds a softer note to proceedings in the formal restaurant. The kitchen delivers gently-modernised country-house cooking built on soundly-sourced Scottish produce, setting off with crispy confit duck leg with Puy lentil cassoulet and Bramley apple purée, followed by pan-fried venison haunch matched with dauphinoise potatoes, green beans, celeriac purée and grand veneur sauce. End with caramelised banana with passionfruit syrup and a lime tuile.
