This grand modern hotel is in a prime location on St Stephen's Green, and offers a range of eating and drinking options culminating in the tip-top Saddle Room. Here a menu of modern brasserie dishes specialises in seafood (including generously loaded platters) and majestic 32-day aged beef (two of you might set about a pound of Chateaubriand). Modernists might consider the likes of seared foie gras in Banyuls with fig compôte, or Knockdrinna goats' cheese with pickled courgette in beetroot emulsion. There's a five-course taster showcasing the more adventurous dishes, while puddings take a traditional line for rhubarb crumble, or blackberry mousse with caramelised apple.
