The Fahrenheit is the destination restaurant of Dublin's Clontarf Castle Hotel, a beguiling mix of the ancient (12th-century roots) and modern boutique luxiness, and it's a dramatic showcase for some striking modern Irish cooking. Kick off with beetroot-cured wild salmon with smoked salmon mousse, beetroot gel and horseradish, and move on to loin of Wicklow lamb, cooked pink and served atop garlic risotto, with slow-roast belly, roasted onions, carrots and fondant potato, or perhaps loin of venison with dark chocolate jus, grilled leeks and mushrooms. Conclude happily with braised rhubarb topped with fruit and nut crumble, mascarpone and chunks of meringue.
