Starting life as a dower house in the Georgian era, Summer Lodge had another layer added in 1893 when its resident Earl commissioned local architect (and sometime novelist) Thomas Hardy to draw up the plans. It stands in a neat four acres next to an extensive deer park, and is decorated throughout in impeccable country-house elegance. A riot of pinks and purples illuminates the dining room, with tables got up in ceremonial ribbon like wedding presents, which makes a suitably dramatic setting for Steven Titman's exploratory modern cooking. The evening carte offers a wealth of inspired choice, in a range that spans Lyme Bay scallop céviched in lime and chilli with coriander gel and watermelon, to main courses built on pedigree prime materials, as witness an easternised Creedy Carver duck breast with shiitakes and a stir-fry of bok choi and cashews, or gilthead bream with braised fennel and Kalamata olives. For the grand finale, there could be a giant pineapple-centred macaron of coconut and Malibu, or white chocolate bavarois with basil gel and pink grapefruit sorbet.
