Once home to a dozen priests, there is a tangible sense of the past within the thick stone walls of this 700-year-old house but a modern gloss prevents any feeling of stuffiness, particularly in the Beaminster Brasserie. The kitchen strikes a good balance between creativity and reassuringly classical thinking, with regional produce bringing a sense of place. Flavours hit the mark throughout, starting with crispy sea bream, pak choi, fennel, ginger, salt-and-pepper chilli squid and black bean sauce. A more traditional approach is evident in a seared duck breast, fondant potato, celeriac purée, Savoy cabbage and girolles.
