A stone-built inn near the Pennine Way named after the Victorian steel magnate who invented the folding ribbed umbrella. Breads of the day, variously flavoured with treacle or with Henderson's relish and onion, make an encouraging prelude to starters such as pig's trotter and ham with a slow-cooked egg and crispy potato in anchovy sauce, or a sturdy broth composed of kohlrabi with brown shrimps and sea lettuce. Seasonal game is a winner, perhaps roast breast and braised leg of pheasant with cabbage in Madeira, or there may be poached lemon sole with cavolo nero and Jerusalem artichokes. Finish with chocolate parfait, served with coffee sorbet and a burnt clementine.
