Morley Hayes has been a dynamic hotel since the 1980s, and with its golf complex, conference facilities and wedding venue, it has most bases covered. The kitchen offers a roster of unpretentious modern dishes, with influences from around the globe adding vibrancy and colour. Crispy pork terrine with black pudding and rhubarb purée may whet the appetite for roast loin of local lamb given a Moroccan spin with lamb kofta, couscous and smoked aubergine, or you might head east for five spice-roasted duck with sweet potato purée, pak choi and soy sauce dressing. Finish with ginger beer rum baba with rhubarb compôte and vanilla cream.
