If Grindleford sounds like the made-up location of a Miss Marple mystery, The Maynard suits it to perfection, its stone-built majesty rising out of the Derwent Valley. Lightly sautéed breast of wood pigeon opens the show, served with braised baby leeks and puréed butter beans in a port reduction. This is followed by accurately timed sea bass dressed in lemon, with Jersey Royals and a summer salad of peas and rocket, or 'chicken cooked two ways' - confit leg and poached and roasted breast (so three ways, really) - with lemon spinach and colcannon in tarragon sauce. Finish with a multi-faceted coconut tasting, its chocolate mousse and sphere of sponge cake the highlights.
