Santo Cusimano runs a highly individual rural retreat. With the rolling Amber Valley all about, it's in a prime slice of Derbyshire walking country, and has been fashioned from an old farmstead. The dining room soothes the senses with its soft-focus pastel charm and smart table settings. Menus mobilise plenty of pedigree local produce and given the owner's provenance, Italian influences are never distant. Start with a home-made black pudding served with spiced brown sauce and a soft poached egg, move on to roasted duck breast with white bean and tomato cassoulet and duck sausage, and finish with a sugar hit from sticky date and pumpkin pudding with caramel sauce.
