The white-fronted Van Dyk stands on the A619 not far from Chesterfield. Amid the surrounding ruggedness, it looks a little like a sugar-frosting confection, which only adds to its idiosyncratic character. Inside, it's geared up for weddings and business. There's a hint of old-school formality about the Bowden dining room, with swagged curtains, a trio of chandeliers, and a baby grand piano. Modern northern cooking is the bill of fare, with dishes founded on sound culinary logic. Open with duck liver and orange pâté with Madeira jelly and cranberry compôte, as a prelude to seared monkfish tails with roasted salsify and girolle mushrooms.
