A narrow-fronted boutique restaurant-with-rooms in pretty Ulverston, just south of the Lake District, Virginia House's amenities include an on-trend gin parlour with over 100 brands, a feature you might have kept quiet about in centuries past. A smart black and grey dining room is the setting for innovative British cooking. Variations on mackerel offers céviche, tartare and a fried fillet, along with kohlrabi remoulade and peanuts, before lamb with its own spring roll, or sea bass with borlotti beans and sautéed romaine in a pesto-laced broth. Blumenthal-style concept desserts include a rather effective breakfast-themed tea pannacotta with buttered toast ice-cream and chamomile jelly.
