The venerable black and white hotel wears its age on its sleeve, having started out as a coaching inn in the Tudor era. Culinary modernism is the order of the day in the light, relaxing dining room, where choices might include salmon cured in beetroot and gin with horseradish crème fraîche and lime jelly, and main-course belly and fillet of pork with black pudding, buttered kale and apple soup. Seafood is imaginatively handled, as when halibut arrives with a crab beignet, asparagus and herbed gnocchi in lemon cream sauce, and it all concludes with desserts that score highly for novelty, such as Piña Colada cheesecake with pineapple compôte and coconut popcorn.
